Marine Posted November 5, 2007 Share Posted November 5, 2007 It is not oriental at all, more Mexican than anything... But I have never seen it offered anywhere else. They called it taco rice. I call it good. 1)ground beef 2)rice 3)shredded cheese 4)shredded lettuce (optional) 5)salsa Prepare the ground beef however you normally like it for taco meat. Cook the rice When both are done, grab a bowl. Put some rice in the bottom (one serving, whatever you think you can eat). Cover with same amount of meat Then add as much cheese and lettuce to the top as you want. Then dump as much salsa as you want on top Mix thoroughly and enjoy. It's very, very good. and easy. And here I was thinking you might have something that would remind me of my time there. I can honestly say I never had this there, but I will have to give it a try. Link to comment

Your Taco Rice reminds me of an old favorite from my recipe box: Mexican "Sandwich" This recipe is assembled in layers in the order given. Don't mix! Serves four. 13 oz package Fritos, or Tortilla snacks (chips or strips) 3 cups hot cooked rice (2) one lb. 3 oz. canned chili (or homemade), heated 4 cups shredded crisp lettuce 2 tomatoes, chopped 2 green onions (shallots), chopped 1/2 lb cheese, grated 2 oz. jar stuffed olives, chopped (optional taste treat: Salsa, added just after the lettuce) Place 1/4 package Fritos in the bottom of four dinner plates. Top Fritos with the rest of the ingredients in the order given above. Don't mix. Serve immediately. Enjoy! Link to comment
