prickly pear

Another native plant, the pads of the prickly pear can be eaten, after removing the thorns and the little sticklers. They are called nopales. Also the ripe fruit, the tuna, is edible, and can be used to make a very good jelly. I made jelly this past year using the tunas from the prickly pear that I have in the yard as landscaping plants. It takes a lot of cooking to jell, but is very good. I made 4 batches, two jelled and two became syrup, which I found goes very well with ham.
