ROCK CAKES

 

1 egg

2 cups flour

1/4 lb. margarine

1/2 cup sugar

3 oz. currants

2 tsp. baking powder

2 tsp. Vanilla essence

 

Cream butter and sugar. Add egg, then flour, baking powder, vanilla essence. Add currants last. Grease and flour baking tin, drop with teaspoon in high mounds. Bake in hot oven for 15 - 20 minutes. Makes about 26 cakes.
