mishbloom Posted August 30, 2008 Share Posted August 30, 2008 My hubby loves Pepper Cabbage--especially one of the PA Dutch recipes that an older gentleman at church uses. (That was passed down from his great-grandpa to his grandpa to...you get the picture!) I found two online that are pretty much the same. What I want to know is if these would be safe to can. Pepper Cabbage Recipe #1 1 head cabbage, shredded Salt to taste 1 cup sugar 3 tablespoons cider vinegar 1/2 cup diced red/green peppers Add the salt and sugar to the cabbage. Work in with your hands until it is juicy. Add the vinegar and work in. Add the peppers and stir. Pepper Cabbage Recipe #2 4 c. shredded cabbage 1/2 green pepper, chopped fine 1 stem celery, cut fine 1 tsp. salt 5 T. sugar 1/2 c. water 5 T. vinegar (apple cider) Combine all ingredients, mixing well. If refrigerated, will keep well for several days. How long would I need to can these? And I'm assuming I'd probably have to up the vinegar? Anyone? *looks imploringly at Darlene* Also, can you pickle cabbage by itself? I found some recipes online to do so, but there's nothing anywhere in the Blue Book or on the...other website...forgot the name! (Don't laugh at my Alzheimers!!) For some reason, cabbage does not seem to be can-able in any other way than sauerkraut (which I don't like, regardless of the thousands of PA Dutch ancestors I have screaming in protest!). The other part of my question is: If I can can pickled onions, pickled cabbage, and pickled peppers SEPARATELY, can I pickle them together and can them together?? (Especially since they all seem to be using pretty much the same pickling brine.) Thanks! Link to comment

Your cabbage and peppers could be dried, and then reconstituted to make your husband a “fresh” batch of Pepper Cabbage. Link to comment

Which brings me back to the question of, if they can be canned separately or in combination with something else anyway, why can't I do just the three together? (Minus the tomatoes.)
