ArmyOfFive4God Posted November 18, 2008 Share Posted November 18, 2008 I got a base recipe from allrecipes, but I tweaked it SO much, that it really became my own. Chunky tater soup 1 pkg bacon 1 medium chopped onion, plus equal parts of chopped celery & chopped carrots (chop these fine, I used my mini processor) 5 cups cubed potatoes 1 T dried parsley 1 T garlic 2 cloves garlic minced 1 (10.75 ounce) can each condensed cream of chicken & mushroom soups 3 cups milk (or 3 cups water & 1 cup dry milk powder) 6 oz velveeta sea salt to taste ground black pepper to taste In a large saucepan, cook bacon until crisp. Remove bacon, and set aside. Drain all but 3 tablespoons bacon grease from the pan. Brown veggies, garlic & spices in bacon fat over medium heat. Add potatoes, and enough water to cover. Cover and cook on med-hi until potatoes are tender, 15 to 20 minutes. Stir together soup and milk until smooth; add velveeta & bacon, add to potato mixture. Heat, until velveeta melts. Add salt and pepper to taste. Garnish with dollops of sour cream if desired. Link to comment
