My DH's favorite meal, a frequent meal in our house and is dinner tonight.



My olla.



Put 4-6 cups dry pinto beans in a beanpot, add 1/6 of a package of bacon.


Add enough water to cover and simmer on low for about 4 hours, adding water as necessary.



Serve with rice:


In a frying pan, put a couple of handfuls of rice, add enough oil (1-2 tbs) to coat rice.

Brown rice & remove from heat.

Sprinkle minced onion to taste (1-2 tsp dry or 1/4 C fresh diced)

Add 1-2 tbs diced tomato & 1-2 tsp of tomato bullion (Caldo de Tomate).

Add enough water to cover and simmer 1/2 hour, until water is absorbed & rice is soft.
