vigilant20 Posted October 9, 2009 Share Posted October 9, 2009 I'm another one that has lots of green tomatoes left this year. So here's my first attempt at cooking with them. The recipe was originally found on allrecipes.com. My pie crust wouldn't win any awards, but the overall effect was like a apple pie with bland apples or something. The texture was good, and the tomatoes were so mildly flavored that I wouldn't have guessed that's what was in there. Recipe makes a 9 inch pie. My test batch was half a recipe in a small stoneware casserole dish. 1 recipe pastry for a 9 inch double crust pie 3 tablespoons all-purpose flour 4 teaspoons lemon zest 6 tablespoons fresh lemon juice 3 tablespoons butter 3/4 teaspoon ground cinnamon 1 1/3 cups white sugar 1/4 teaspoon salt 3 cups diced green tomatoes Prepare your pie crust of choice and line plate. Mix next 7 ingredients well, then fold in tomatoes. Add top crust and bake at 450 for 10 minutes, reduce to 350 and finish baking for 30 minutes. Link to comment
