Violet Posted June 23, 2010 Share Posted June 23, 2010 Are you presoaking the fruit ? If so, then just the Fruit Fresh. If lemon juice is called for in the jam itself, then yes, you need to add it to the jam to get a gel. Some fruits have it added so you have the right blend of acid, fruit, sugar, and pectin to get a gel. Some jam recipes need it for safety, like banana jam, and a few other lower acid fruits.
