TurtleMama Posted September 5, 2010 Share Posted September 5, 2010 Hey y'all! Okay, I'm canning potatoes! Woo hoo! One question: my pressure canner is full with seven quarts (it's a little 16-quarter) and I have potatoes left over. They are still sitting in their hot water that I boiled them in. I've got the pot with the water and potatoes in the oven at 215 degrees to keep any bacteria from growing. Is it okay if I process them in a second batch after my first batch is done, or will they be too soft and mushy to safely can by then? If I don't happen to get a response before my canner's done, I'm just going to mash and freeze them...I don't want to do something unsafe and risk a yucky bacteria. Thanks, and have a great Sunday!
