Daylily
I make gluten free breads for DS. I've found that rice flour is quite grainy when baked but you can add about aTablespoon of potato flour (not potato starch) per cup of rice flour and it gives it a nice texture. I've substituted it for wheat flour in several baked goods for DS. It's different but good. You can make your own potato flour too by dehydrating potatoes and grinding them. We just followed the drying directions at NHPC. Link to comment
