Horseyrider Posted June 12, 2011 Share Posted June 12, 2011 Yes you can can them. There's no difference except the blanching process cooked them a bit, so you may have a mushier texture when done. If it was me, I'd thaw them slowly in the refrigerator to minimize the amount of juices lost through ice crystals piercing the cells. Now you have me curious, though; what's an "enormous amount?" LindaLou Posted June 12, 2011 Share Posted June 12, 2011 Another option is to dehydrate them. You don't even have to thaw them first. I dehydrate frozen veggies all the time. I have them to throw into whatever I am making as well as using the dried corn for grinding into cornmeal. The only problem with green beans (if they are the French cut) is that they have sharp ends and tend to puncture Food Saver bags. If they are the green beans cut like canned green beans straight across, no sharp ends, they should dry and Food Save great. Link to comment
