Deerslayer
To can dry beans, put one cup dried beans in quart jar, leave one inch headspace, add boiling water. Process 90minutes Is this safe or should you cook the beans first???? Quote Link to comment
WormGuy
I always cook mine first to make sure they are hydrated. Look here: http://nchfp.uga.edu/how/can_04/beans_peas_shelled.html John Quote Link to comment
Deerslayer
I have always cooked mine first too, but i am specifically wondering About canning bags of 15 bean soup. I don't know if I could can it fixed by the recipe nor just plain. The recipe is onion, diced tomatoes, chili powder, garlic, lemon juice. I would add the meat when I was heating it up. What do you think, could I can it by the recipe or should I can it plain like I do all beans??? Thanks so much Quote Link to comment
Violet
Dried beans must be reconstituted, cooked for 30 min. then hot packed. Never raw. The time spent heating up the contents of the jars will make the foods underprocessed. Sorry, no shortcuts in canning. Not if you want your food to be safe to eat. Quote Link to comment
Deerslayer
What about canning the recipe that I posted? Or should I just do the beans and make the recipe when I heat them up?? Edited September 12, 2012 by Deerslayer Quote Link to comment
Violet
Can it as a soup, follow the guidelines. Fill the jar half full of the solids and half broth and it will be safe. Quote Link to comment
