    Sometimes I buy :shopping: stuff that I KNOW I won't use :whistling: (so I can return it later in the month). lt's my "savings" plan. :blink:

     

    What I mean is, I'm too undisciplined to have cash around because I know I will spend it...... :busted:......so, I "invest" in merchandise that I will return for cash when I really need it. :faint3: I know. I'm bad. :behindsofa:

  3. Hmmm...Darwin observed during his voyage on he HMS Beagle that organisms were adapted to their environment (Darwin's finches on the Galapagos Islands, for example). He also observed that the fossil record reflected changes in organisms over long periods of time. I was never quite sure how this conflicted with the view that God created everything. Perhaps it's just a more detailed look at the mechanisms by which creatures were brought to their current forms. It's a good thing that organisms can adapt to new or changing environments, otherwise many more would now be extinct! Just look at the way plants adapt to changing climate. They spread into more hospitable environments and at times adapt to less hospitable ones.

  4. I think mine is what YOU call a city ham! :D I've had a "country" ham only one time that I can remember. It was a Virginia ham. It had to be soaked for two days to remove the salt and rehydrate the meat. It still tasted salty if I remember correctly. No red-eye gravy for me either---I don't drink coffee!!!

     

    As to canning the second ham, I think I will cook it, cut it, and freeze it. Or perhaps, cut it and freeze it, and cook it as needed. O.o

     

    I guess I will just cook, shred, and can the THREE pork roasts and 20 lbs of ground beef I also bought!

  5. Jarred and canned my ham: 15 psi for 75 mins. The liquid (plain water) turned the color of dark brown with a red tint, and the meat pieces shrank and took on a brownish color too. Opened one up for dinner.............pieces are nice and tender but otherwise flavorless. I guess I should have added some salt to the water when packing it. Not really the results I was looking for! I have another ham to process and I would like different/better results. Can I pre-cook the ham in the oven, or boil it in a pot to rid it of the sugars(?) that turned it dark???

  7. If the gasket is soft and pliable, without any nicks or cracks in it, it should be good. You can test your canner by just putting 2"-3" of water in it and run it through its paces[/b]. After venting and pressure is allowed to build up, you should not see any water or steam existing from the area of the gasket/lid. If you do then the gasket should be replaced.

     

    I had to replace mine eventually. I finally found a gasket at ACE Hardware(cost about $10). I took the old one with me and "matched" it in the store. Hint: if you have the box or the manual, the model no. should be printed on it somewhere. That is a much preferred way to buy your replacement!

    The non-stick surface is Teflon. A bottom rack for your pot can be created by zip-tying several screw rings together, but I'm not sure whether it can be used for pressure canning, because if you don't know the weight of the "rattler" you won't know if you've created the proper pressure inside the pot for canning purposes.

     

    Violet will probably be along any time now and can probably be more difinitive.

     

     

     

    NEW-I bought my canner (used) on e-bay. You might try looking there, or possibly Craig's list.
