Can I buy some of those supermarket pumpkins they are selling for jack o lanterns to use the seeds and make pies? Link to comment
mk7925 Posted October 20, 2005 Share Posted October 20, 2005 I use the smaller sugar pie pumpkins, waltham butternut squash, hubbard squash, they are all interchangeable. Yes you can use the jack o lantern pumpkins also, but I found the smaller ones more flavorful. Link to comment

The big pumpkins you see everywhere this time of year tend to be too large and stringy for baking, but the sugar pumpkin is small and sweet and is perfect for pie. A medium sized sugar pumpkin pie (about 4lbs) will yield approximately 1 1/2 cups of mashed pumpkin. To make your own pumpkin pie: Cut the pumpkin in half and discard the stem section and stringy insides. Save the seeds and bake them for a snack. In a shallow baking dish place the 2 halves face down and cover with foil. Bake in 375 oven for about 1 1/2 hours for a medium sized pumpkin. Once the baked pumpkin has cooled, scoop out the flesh and puree in a food processor or mash with a potato masher. If you have left over puree from your pies, you can freeze it, it's good in the freezer for about 6 months. Link to comment
