Spiced Apple Curd

1 lb apples

rind and juice of 1 lemon

4 oz butter

12 oz sugar

1 teaspoon ground ginger

1 teaspoon ground cinnamon

4 eggs, beaten

Peel and core apples, cook to a puree. Place in bowl over a pan of simmering water, and add rest of ingredients. Stir frequently until thick, pot and cover while hot.

This is lovely on toast or scones. Very rich, so you don't need a lot.
