ok I know many of you consider these to be food! But I dont so that is why I put a little green man on the subject ...

Sweet potato and corn hash browns with bacon and avocado

Degree of difficulty: Low

You need:

2 cups peeled grated golden sweet potato

2 cups sweet corn kernels

6 eggs

½ cup crumbled feta cheese

4 spring onions, finely chopped

4 sprigs fresh coriander, finely chopped

60grams Rice flour or cornflour

8 Rashers bacon, rind removed

2 large avocadoes

Salt and Pepper

Sweet Chilli sauce, to serve

Method:

Turn the oven on to a low heat. (To keep the hash browns warm after cooking)

Place the sweet potato, corn, eggs, feta, spring onions, coriander and flour in a bowl and mix well. Form the mixture into 12 hash brown patties.

Cook the hash browns in an oiled non-stick frypan over a medium heat for 2 minutes on each side or until golden brown. Do this in batches to avoid crowding the pan. Place the cooked hash browns on paper towels and keep them warm in the oven, along with 4 serving plates.

Meanwhile cook the bacon under a grill.

Peel and roughly mash the avocadoes and season with the salt and pepper.

Stack the hash browns on to the warmed plates, with the bacon and spoonfuls of avocado in between. Drizzle some sweet chilli sauce around the edge of the plates.

Ingredient suggestion. Camembert cheese can be used instead of Feta.

I googled Aussie sites for avocado recipes and there are thousands, but the majority of them use avocado raw or in a dip form. The pie site looked interesting though
