Recipes using Mayonnaise

Favorite Lemon Pound Cake

2 cups all-purpose flour

1 Tbsp. baking powder

1/4 tsp. baking soda

3 eggs

1-1/2 cups sugar

1 cup Canola Cholesterol Free Mayonnaise (Best Foods)

1/4 cup sour cream

1 Tbsp. grated lemon peel

1 tsp. vanilla extract

 

Preheat oven to 350°. Spray Bundt pan with nonstick cooking spray; set aside.

In medium bowl, with wire whisk, combine flour, baking powder and baking soda; set aside.

In large bowl, with electric mixer on medium speed, beat eggs with sugar until light and fluffy. Add Mayo, sour cream, lemon peel and vanilla and beat well. On low speed, beat in flour mixture just until blended. Spoon batter into prepared pan.

Bake 35 minutes or until toothpick inserted in center comes out clean. On wire rack, cool 15 minutes; remove from pan and cool completely.

Sprinkle with confectioners sugar and serve with fresh fruit or whipped cream.

PECAN COCONUT TOPPED CHOCOLATE CAKE

1 box (18 oz.) chocolate cake mix

1 cup Hellmann's or Best Foods Real Mayonnaise

1 cup water

3 eggs

1 cup flaked coconut

2/3 cup firmly packed brown sugar

1/2 cup finely chopped pecans

 

Instructions:

1. Preheat oven to 350°. Grease and lightly flour a 13 x 9-inch baking pan; set aside.

 

2. In large bowl, with electric mixer on low speed, beat cake mix, Mayo, water and eggs 30 seconds.

Beat on medium speed, scraping sides occasionally, 2 minutes. Pour into prepared pan.

 

3. In small bowl, combine coconut, brown sugar and pecans. Sprinkle over cake batter.

 

4. Bake 40 minutes or until toothpick inserted in center comes out clean. On wire rack, cool completely. To serve, cut into squares.

BROWNIE COOKIE BITES

 

2 cups all-purpose flour

1/2 tsp. baking powder

1/4 tsp. salt

1 package (12 oz.) semi-sweet chocolate chips

2 eggs

3/4 cup sugar

1/2 cup Best Foods Mayo

1 tsp. vanilla extract

1 cup chopped walnuts

 

Instructions:

Preheat oven to 375°. Lightly grease baking sheets; set aside. In medium bowl, combine flour, baking powder and salt; set aside.

In microwave safe bowl, microwave 1 cup chips at HIGH 45 seconds or until chips are melted; stir until smooth.

In large bowl, with electric mixer on medium speed, beat eggs, sugar, Mayonnaise and vanilla.

Beat in melted chocolate, then flour mixture just until blended. Stir in remaining chips and nuts.

On prepared baking sheets, drop mixture by rounded two-tablespoonfuls, 2-inches apart.

Bake 8 minutes or until set. Remove cookies to wire racks and cool completely.

Spinach Dip

1 package (10 oz.) baby spinach, chopped - or - 1 package (10 oz.) frozen chopped spinach, thawed and squeezed dry

1 container (16 oz.) sour cream

1 cup Best Foods Mayo

1 package Knorr brand Vegetable recipe mix

1 can (8 oz.) water chestnuts, drained and chopped (optional)

3 green onions, chopped (optional)

Combine all ingredients and chill about 2 hours.

Serve with your favorite dippers.

Try that spinach dip using Knorr Spring Vegetable soup mix instead of the regular sometime. And definitely include the green onions and the water chestnuts. Makes the best spinach dip ever (it's my secret ingredient)! My DH's family demands that I bring it to every family gathering.
