Need help canning beans

Hi there everyone, I accidentally posted in the kitchen forum with this question when I meant to post it here...I am needing help with canning beans..

This is my post from over there: Folks, Does anyone here have a good recipe for canning Boston Baked Beans? Yes, I know you can buy them canned but I want to make home done ones because of food allergies to corn and mustard. I have tried to make these in the past but they don't seem to pressure can well, turning into mush? Is there some secret to this I am missing?

 

Also, my husband wants to can his chili recipe, which also contains beans. Is there some way to pressure can beans so they don't go mush?

 

I have canned for 25 years and yet have not hit on a good way to do either of these things and decided what the hey, ask you good ladies here who may have more knowledge in this area. Meanwhile, I'm searching online for canning bean recipes and reading all I can about it before trying this again. thanks in advance..that is

Judy, I do have a recipe but it's still packed somewhere frown sorry. Mine don't turn to mush though, and I follow the procedure from the National Center for Home Food Preservation here:

While I can't help you with the recipe yet till I find mine, perhaps the cooking directions might help to see if they suggest doing something you don't do already.

Darlene, Thanks much. It's mainly cooking directions I'm looking for anyway! I can't use mustard in my beans because (you guessed it) I'm allergic to it...so I substitute a little ginger and a teensy bit of red pepper to give it that dash of warmth...and it's really quite good. I thought perhaps I should not be cooking the beans before canning them or something.

 

I also found those directions you posted and printed them out. I'll just give it a try and see what happens!

 

I so appreciate this site because it revved me up for canning more this year than I have done in the past few. Awesome! (and now my dental hygenist is getting a pressure canner and asked for help--so maybe I'll have a canning pal in real life!!!)
