Evergreen Posted April 28, 2008 Share Posted April 28, 2008 I have read several times that you should not sub ingredients in canning - BUT DH will not eat celery at all -and I noticed it is in several ingredients like the chicken soup and Goulash -can I sub something for the celery- extra carrots or onion???? And what about people who dont eat onions (like DS's DH)? Link to comment
Violet Posted April 28, 2008 Share Posted April 28, 2008 Usually it is safe to sub one vegetable for another in equal amounts. That, or just omit the ones you don't like. As long as you don't use any extra amount of low acid vegetables you are fine. Other than corn, which is dense and needs longer processing time. There is a recipe/method for mixed vegetables you use in those sort of cases if you are canning just vegetables . Something more dense, like a mixed vegetable, compared to a soup, which should be half solids in the jar and half broth will be different. So, before I provide a final answer, I would feel better knowing exactly what it is you are wishing to do. Link to comment
