Genoa Posted August 7, 2008 Share Posted August 7, 2008 I have always used my old canning rack with handles which are used for lowering the jars into the water or lifting the jars up out of the water. Now I'd like to try simply using a deep pot with the flat rack from the bottom of my pressure cooker in it. I have two racks for my pressure cooker, so I could place a second rack on top of the first row of jars (pints) and add a second row, with plenty of room for a few inches of water covering all jars. Have you found that all the jars seal, as they do with only one row of jars? Are the jars on the bottom disturbed by the rack and jars on top so that it might affect their sealing? I'd rather do two canners than one canner, if there is an increased threat that the bottom ones won't seal properly. Thanks. Link to comment

Jeepers Posted August 8, 2008 Share Posted August 8, 2008 I've done that too. The only problem I've ever had is when the water starts to boil. When it boils, it adds a couple of inches to the top of the water surface. Some of the water would plop out even with the lid on. Just make sure you allow for that. Link to comment
