Economical Chicken and Dumplings; Pinkroses

I made up my own recipe for Chicken and Dumplings

Mom made the best dumplings.

She boiled her chicken and went from there.

I found a cheaper way to make them..

Chicken and Dumplings:

A large can of chicken

A large can of Chicken broth;

( I use Swasons)

1 can of mushroom soup

Biscuit recipe of your Choice

I double mine to make more dumplings

Corn starch for thickening

Put the can of chicken in a dutch oven.

Put the broth in cooking it on medium heat for awhile ; while you mix up your biscuit dough

When you have your dough mixed

Put in the mushroom soup and mix until it is mixed up good.

Then put in some corn startch in a teacup and some water to mix that up good.

put in the pot

Mix all up

Then use a big table spoon ( like a soup spoon) and get a spoon full of dumpling dough and drop in broth.

Do this until it is all gone.

Turn down the heat to simmer

Simmer 15 minutes ; try not to peak

I make mine in a stainless steel dutch oven. I love it

Violet makes her dumplings pretty by rolling out the dough and cutting into strips and little squares; to much work for Me . Lol

The way I make mine is The Old fashioned Southern Way.

OF dropping them in

Faster too.

Note;

If they don't turn out good don't blame me. Tee Hee.

I make chicken broth and thicken with flour. If I use homecanned chicken, I have the broth in it to use.

Sounds good, Sheila ! I am sure your guys love them !

Oh, I don't always make them fancy. Depends upon how tired I am.

We eat so many noodles here that I am tired of them Lol

This is a good change from them.

and filling too.

As groiciers keep getting more expensive ; cheaper meals I am looking for and that they will eat. Ha. pinkroses

This one does not turn out that way; because of the mushroom soup.

I think I know what you are talking about.

and the canned chicken too is eaiser to work with since you don't have to de-boned the chicken

A chicken to broil or to bake is really expensive these days.

I like baked chicken

Next time they come on sale I might get us one and bake it. hugs sheila

I am having baked chicken for dinner today ! Making fried rice, and a salad with real bacon bits, boiled egg, beets, and carrot on it. May add something else, I don't know. Sounded good to me.

For the dumplings, I often use a recipe from the old Betty Crocker book. The key is to mix them up, and drop on the boiling liquid, and then cover up for the first 10 min. or so, then uncover them to finish cooking, and sort of "dry out".

You can also use Bisquick or that Master Mix for homemade Bisquick that I make. It is really good. Makes a good topping for a chicken pot pie.

Too bad you are not here, Pinkroses, we would can up a bunch of chicken meat for you. It is SO good !
