cowgirl8 Posted July 29, 2009 Share Posted July 29, 2009 Over the weekend i cooked my usual potato soup, but this time i used the pressure cooker. 6 medium potatoes, peeled and cut in one inch chunks enough chicken broth to cover cut up potatoes diced onion 1 T olive oil 1 onion and chive dip real bacon bits Saute onions in olive oil till transparent, add potatoes and broth, cook in pressure cooker for 6 minutes on pressure, quick cool, mash and add dip, then add bacon. Cooking this in the pressure cooker made the silkiest soup ever, fast. It took from the time i started with the potatoes to on the table, less than 30 minutes. Link to comment
