Deblyn Posted April 3, 2003 Share Posted April 3, 2003 This is the traditional cake served at Easter in this country. It is basically a rich fruitcake cooked with marzipan. Half of the mixture is placed in the prepared tin, then a round of marzipan placed on top. the remaining mixture is placed on top and the cake baked as usual. When cool, the top is spread with warmed apricot jam, and another round of marzipan placed on it. !3 little marzipan balls are placed around the edge, and a criss-cross pattern is made with a sharp knife on the centre. the cake is put briefly under a hot grill (don't take your eye off it!) to colour the marzipan.
