MrsClark
Last night I spent hours and hours canning ham. I forgot to process the last jar (had a migraine) and left is sitting in the jar, ready to go, in the oven staying hot. But this morning, its cooled off and has been in there all night. Did it go to waste or can I still process? It is cooked ham already. Link to comment
Violet
You should toss it. You can reprocess within 24 hours of an initial canning, but this was not canned at all. It was not exposed to the high heat of a pressure canner. Now, about the ham... is it just ham or one of those hams with added stuff to it ? If so, it should not be canned. Only fresh smoked, cured hams, not the ones with added ingredients are safe to can. If you read ingredients, you will find that some ham has added milk products, etc. When canning, every ingredient needs to be scrutinized. Link to comment
