Lemon Juice

I have a bottle of opened lemon juice in the fridge and a bottle of unopened in the cupboard. Both have a "Best by" date on the cap of Nov 2010.

 

Are these still safe to use for canning tomatoes?

 

If not, I can always use them to make lemonade or in cooking (NOT canning) recipes and buy new for canning.

 

I just want to be safe!

I would say it is OK if you are using it within the next few months. I would put the unopened one in the fridge, too, personally.

I would not keep it stored for years if it is that old already. Usually it is a quality issue, more than a safety issue with food that is outdated. I have noticed in older bottled lemon juice that it can get a bad sediment in the bottom of the bottle.

 

Another thing you could do is open it up, put in small containers or even icecube trays and freeze. If you froze in say 1/4 cup amounts, you can mark them and take out what you need and use them up. It will keep better that way.
