Amishway Homesteaders
So we are gathering up all the last of the herbs and things out in the garden before cold nights 'kill' whats left and been drying herbs both by hanging and using the dehydrater. SO Lori says I love the way the room smells using the dehydrater but are you 'cooking' out all the good stuff? So I said..................... Well I didn't say anything because she got me thinking- Am I? So come on those of you that dehydrate - Am I better off 'hang drying' them or it is OK to 'heat/air' dry them? Link to comment
kappydell
keep the heat as low as you can to preserve as many volatile oils as you can. You may just need to use more. You don't 'hurt' them per se, leastways i never noticed any difference when i dehydrator dried my herbs. its too damp in my area to hang them. Link to comment
Annarchy
I agree with kappy. Around here, I hang them and the next day or two they are so dry I can hardly touch them without the leaves crumbling into tiny pieces. Dry desert... Link to comment

Same here- Seems when I hang them I forget about them and then when I go to take them down, leaves are falling everywhere. And the ones I put a paper bag around never get done right. Thanks for the feedback as my brian was off wack again? Link to comment
