When in doubt, consult the National Center for Home Food Preservation for approved methods and recipes. She is wrong about botulism in jelly. They are high acid foods and will not "grow" the botulinum toxin which is WHY it can be water bath processed. In the south we have farmer markets that still sell items “by the each.” Meaning by one. So if you need say 6 eaches of squash for a stewed squash, you know you need 6 individual squash.
