brightblessings5 Posted August 22, 2006 Share Posted August 22, 2006 Make this every fall/winter. Was wondering if I could can some in a water bath like you would for spiced honey? Also, do you think I could leave some of the ginger/lemon pieces in the honey when I can it so it continues to infuse the honey? Put in a quart jar: 3 lemons - thinly sliced and seeded 2 inch piece of fresh ginger, sliced 1 1/2 cups honey let sit for a few hours, shaking the jar now and again. I usually let the mixture sit overnight. Strain off the lemon and ginger and store in the fridge. To use, stir about 1/4 cup into 6 oz of hot water or tea. Very soothing for sore throats and colds. (Honey that "sugared" in the pharoah's tombs turned out fine when reheated - thought *I* sure wouldn't want to try it!! Link to comment
