Can I can this? Lemon Ginger Infused Honey

Recommended Posts

Make this every fall/winter. Was wondering if I could can some in a water bath like you would for spiced honey? Also, do you think I could leave some of the ginger/lemon pieces in the honey when I can it so it continues to infuse the honey?

Put in a quart jar:

3 lemons - thinly sliced and seeded

2 inch piece of fresh ginger, sliced

1 1/2 cups honey

let sit for a few hours, shaking the jar now and again. I usually let the mixture sit overnight. Strain off the lemon and ginger and store in the fridge. To use, stir about 1/4 cup into 6 oz of hot water or tea.

Very soothing for sore throats and colds.

Thanks for any help you can give me.

I've never heard of canning just honey. It's so full of natural preservatives that I don't think it needs it. (Honey that "sugared" in the pharoah's tombs turned out fine when reheated - thought *I* sure wouldn't want to try it!!
