Ladies, Would You Please Share Your Favorite Meatloaf Recipe!

Ladies, this is one of many meat loaf recipes which I like to prepare for my family.

Grated carrots and cheese, add a hint of color and good taste to this meat loaf,

but it's the topping that makes this meat loaf taste out of this world!!

 

Glazed Meat Loaf

 

PREP: 15 min.

COOK: 60 min.

 

2 eggs, beaten

2/3 c. milk

1-1/2 cups (6 oz.) shredded cheddar cheese

1 c. crushed saltines (about 30 crackers)

1 c. finely shredded carrots

1/2 c. finely chopped onion

1/2 teasp. salt

1/4 teasp. garlic powder

1/4 teasp. black pepper

2 lbs. lean ground beef (sirloin or ground round)

 

Glazed Topping: *See Note

1/2 c. packed brown sugar

1/2 c. ketchup

2 tablesp. Dijon mustard

 

In a large bowl, combine eggs, milk, cheese, saltines,

carrots, onion, salt, garlic powder and pepper.

Crumble beef over mixture, and mix well.

Shape into a loaf.

Place in a greased 13 x 9 x 2-inch baking dish.

Bake, (uncovered) at 350° for 50 minutes.

 

For glaze, in a small saucepan, bring the brown sugar,

ketchup and mustard to a boil.

Reduce heat; simmer, (uncovered) for 3-5 minutes,

or until heated through.

Spoon over meat loaf.

Bake 10-15 minutes longer, or until meat is no longer pink,

and a meat thermometer reads 160°.

Drain; let stand for 10 minutes before slicing.

Yield: 6-8 servings.

 

*Note: When ever I prepare this meat loaf,

I double the amount of glazed ingredients,

( that's the way our family likes to eat this meat loaf )

but you could also top this meat loaf,

by preparing just a batch and a half of the glazed ingredients.

I don't think I ever put the same thing in a meatloaf twice in a row.. Sometimes I add crackers, onions, eggs, and a can of tomato soup.. Other times instead of onions I'll add a package of onion soup mix... Or instead of the onions and tomato soup I'll throw in a jar of salsa.. But I really love to make it with brown sugar and dried green peppers..With a brown sugar glaze on top! After I get it all mixed together I peel carrots and potatoes and lay them beside it in the pan as it cooks like a roast! YUM!

No exactly measurements known, they change every time:

 

hamburger/ground turkey (about 1 lb total)

1 egg

about 2 handfuls of breadcrumbs/oatmeal/crackers

Can of cream of mushroom soup

Random seasonings (may include, depending on mood, worchestershire sauce, rosemary, thyme, roasted garlic, garlic powder, minced garlic, Italian seasoning, or anything else I think might work well)

 

Mush those all together, put in a 9x9 or 8x8 or 4 little loaf pans. Bake at 350 until the middle isn't pink.

 

At that point, take another can of cream of mushroom and mix it with a can of milk (as in, dump out the soup, fill the can with milk). You can also just put 1/2 can in the meatloaf, then use the other half with half a can of milk - depends on how much gravy you like for potatoes. Pour the mixture over the meatloaf and put it back in the oven for about 10 mins.

 

Take it out, dump each portion on top of/next to mashed potatoes (we tend to mix our corn in with it too). Also freezes well on top of mashed potatoes (since you mix them together, the potato texture doesn't bother me much).

I actually hate meatloaf, but I make it so much for my husband that I guess it's finally growing on me. Here's his favorite:

 

Brown Sugar Meatloaf

 

1/2 cup packed brown sugar

1/2 cup ketchup

1 1/2 pounds lean ground beef

3/4 cup milk

2 eggs

1 1/2 teaspoons salt

1/4 teaspoon ground black pepper

1 small onion, chopped

1/4 teaspoon ground ginger

3/4 cup finely crushed saltine cracker crumbs

 

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan.

 

Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.

 

In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.

 

Bake in preheated oven for 1 hour or until juices are clear.

I use 3-4 pounds of ground beef

1 pk saltines.. ground to smitherines

1/2 pint jar of your favorite salsa (mines annies version from MrsS)

1 cup parmesan cheese

and 1 egg

 

Simple and to the point and my family eats it like its going out of style

 

45-55 min in oven @ 350
