Canned Nerd
The Dill Relish recipe calls for 15 minutes for pints which is 5 minutes longer than the half pints and that's pretty standard. Link to comment
Violet
When a recipe states a certain size jar it is never safe to use a larger size. It is a safety issue. Check here : relish recipe http://www.uga.edu/nchfp/how/can_06/pickle_relish.html Link to comment
ScrubbieLady
Thanks Canned Nerd. Thanks for the recipe Violet. I really think some of the recipes in the Ball Blue Book are for smaller amounts because they think people are wanting to make the smaller amounts. I used to have a different recipe but cannot find it right now. The recipes are almost identical if you triple the amounts in the Ball Book with the exception of the onion and sugar. The UGA recipe has much less sugar. Since I am wanting Sweet Pickle relish, do you think, Violet, that I could increase the amount of sugar and use the UGA recipe? Link to comment
Violet
Yes, it won't hurt to add sugar to the relish. Link to comment
ChristyK
A quick pickle note here: having been blessed this year with more jalapeno peppers than my family can even begin to use (and we use ALOT), I've been experimenting and discovered that sliced jalapeno 'rounds' pickled with a 'bread & butter pickle' recipe are FABULOUS!!! Just thought I'd share. Link to comment
