MommyofSeven Posted June 18, 2008 Share Posted June 18, 2008 Found some apples clearanced out at my local market, got about 4 lbs for $.99, so I made some applesauce. Was planning to can it so I can test my canner (if I messed up somewhere, it would be eaten quickly so no waste) and realized I had no pint jars available. With the big kids not home this summer, I wanted to do pints. Instead I half filled quarts and froze them. But with a canner, can I half fill a quart jar and then can it, or does the extra space mess things up? Mo7 Link to comment
Darlene Posted June 18, 2008 Share Posted June 18, 2008 No, you don't want to have that much space open when you can your foods so either fill the quart jars up and then put in the refrigerator if your family doesn't eat it all at once, or keep them frozen till you can get some pint jars. Violet Posted June 21, 2008 Share Posted June 21, 2008 The air won't be removed in a half filled jar. The air must be removed to prevent spoilage and to get a good seal. Headspace is important in canning recipes. You need to follow the guidelines on that. Glad you did not can them. Link to comment
