I'm wondering if anyone would know how to make honey with rose petals and clover? I'm in need of a recipe. My dad told me that when he was a kid they made it all the time, but no one can remember how to do it. I would love to surprise him with some.

I've had this recipe in my recipe box since I was a younger girl, *grin* ... I have no idea where I got the recipe, and I've never made it.

However, perhaps you'll find it useful.

 

Homemade Honey

 

10 cups sugar

2 cups water

3/4 teaspoon Alum

 

Bring to a boil. Lower heat and boil slowly for 10 minutes. NO LONGER.

 

1 cup clover blossoms

1 cup rose petals

 

Wash blossoms and petals and place in colander to drain.

 

Take honey off heat and add roses and clover.

Stir for 4 minutes and then strain through a sock.

Put in a bottle and let set on cupboard (not 'fridge) for 24 hours to thicken.

This is an EXCELLENT recipe. I made 17 jelly jars of it. My dad was just tickled pink. I used a hot water bath for 10 mins. and I did modify 1 batch using 1/2 sugar and 1/2 Splenda. YUMMY!!!!!!!!!!!!!!

It looks, tastes and moves just like Bee honey.
