Josephine Posted March 7, 2009 Share Posted March 7, 2009 I bought some carrots and potatoes to can. The carrots take 25 min, the potatoes 35 min. I have enough of them together to have a full canner. I'd really like to process them in the same batch to save time and energy. I'm thinking it would be ok to can the carrots for 35 min, but want to be sure. To be clear, they wouldn't be combined in the jars, just say, 9 pints of carrots and 9 pints of potatoes in one canner. And I might have a lot of chicken broth after tonight, can I use the chicken broth as the water in the jars with the carrots and potatoes? Link to comment
Cat Posted March 13, 2009 Share Posted March 13, 2009 I'm sorry... I just saw this now. It should be ok to process the carrots slightly longer. They could end up a bit "mushier", but I wouldn't think so. And I'm pretty sure the broth would be ok as the liquid in the veggies. It's to *your* taste. Is the processing time the same for both veggies and broth? (Don't have my Blue Ball Book handy...) Link to comment
JCK88 Posted March 13, 2009 Share Posted March 13, 2009 The processing time for broth is 20 minutes pints, 25 minutes quarts. I think you can safely process your stuff in the broth and an extra 10 minutes won't hurt the ones that have the slightly shorter processing time. Link to comment
