TurtleMama Posted September 12, 2010 Share Posted September 12, 2010 Last weekend I canned 12 pints of Gala apples in a light syrup. All of the jars sealed, but the apples are floating, with some of them out of the syrup on top of the jars. It's like they learned how to defy gravity in the canner. Is my canner a portal to the alteration of universal laws, or is this normal? It seems like every time I can, something happens that I didn't expect -- and I learn something new. I love it! Cat Posted September 12, 2010 Share Posted September 12, 2010 Apples have a lot of natural "air" in them... it's what makes them so crunchy. Depending on how they're cut, they may float. They should be fine. Link to comment

If you do apples it is best to do a hot pack since they "preshrink" before they go into the jars. That is the one fruit I hot pack. Peaches and pears I raw pack. Apples, I hot pack. Link to comment
