I made an oops strawbeery/rhubarb jam once and it turned out to been the best so now that is how i make it. And get lots of request for it. What had happen is when i was making the strawbery jam i had ran out of pection and ran out to and got what was left of the ruhbarb and added it to the Jam rhubarb is a natural pection. As for the lower in sugar i use raw sugar and less of it, then white. Hope that helps some one, such as it is.
