I was looking for recipes for you, and found a place where someone wrote that they had found it too difficult to make a consistantly-flavored melon syrup for drinks, so they gave up and only bought commercially made ones. Violet Posted February 4, 2008 Share Posted February 4, 2008 Melons don't have enough acid to can them, so you should freeze the melon syrup. I would have no idea how much added acid you would need to make it safe to can. They have a ph level as high or higher than many vegetables. They are related to the gourd family. Link to comment
