mishbloom
I was perusing some of my emergency prep stuff that I have saved on my computer...and something smacked me between the eyeballs. (Yes,it could very well have been the cat's tail...but he's usually right, so I tend to listen when he does these things!) We don't eat a whole lot of meat--mainly pork and turkey/chicken. But the boys would STARVE without the meat they get. (Just ask them--they'll tell you.) I'm assuming you Can Turkey the same way you would Can Chicken? (Point me towards some instructions please?) But here's my million-dollar-question for the night: If I fried up turkey bacon (which is a real must-have around here), can I Can that? So we'd have bacon bits on hand? Any suggestions on how I would do this? (Explain with short words and a large bat, 'cause me and my pressure canner are still getting acquainted.) Link to comment
Violet
Regular bacon is not safe to can, so I am going to say no to the turkey bacon as well. Just too much fat to insure safety in canning it as I can see. You could email the National Center for Home Food Preservation and ask Elizabeth Andress. She is the one who wrote the USDA guidelines for food preservation. I don't have any information on canning turkey bacon. This is something no one has asked me before, just about regular bacon. Here is how to contact Elizabeth : http://www.uga.edu/nchfp/contact_more_info.html There is a link at the bottom for a form for you to send. She has always been very promt to reply to me. Yes, can turkey like chicken. Here is the link how to do so: http://www.uga.edu/nchfp/how/can_05/chicken_rabbit.html Link to comment
westbrook
there is a non-refrigeratable bacon. I have 4 packages of it sitting on the shelf right now. It has a shelf life of like 6 months. Purchase bacon bits, already crumbled. I have a bag I got as costco years ago in the refrigerator and it is fine. I use it from time to time when I don't feel like frying up bacon. Link to comment
Snowmom
I have canned regular bacon and we use it. I have turkey, chicken, beef, and pork all canned at this time, we use a lot of it. Stew, is really a good thing to have on hand too. Come home late afternoon, and open a jar of stew, your meal is ready in 10 minutes. Here are some urls for bacon. http://www.geocities.com/Heartland/Hills/9684/bacon.html http://t2chk.org/new/archives/206 This one has more recipes. http://www.christianhomekeeper.com/meats.html But, it takes you around so here is the one on bacon. http://christianhomekeeper.com/index.php/2...home-can-bacon/ I do know that during 1999, everyone was canning it, that was why I did.
