MommyofSeven Posted June 2, 2008 Author Share Posted June 2, 2008 Yeah...not sure when, but I will post the recipes. sjllm, having the menus for all three meals really helps me with grocery shopping, especially since we've decided to only go into town once a month. We have a store nearby, but it's much more expensive. We don't mind going for perishables-it's cheaper to walk there to get higher priced perishables than to buy the gas to go to town, but I'd rather buy everything I can in the larger town. MommyofSeven Posted June 12, 2008 Author Share Posted June 12, 2008 Beef Taco Bake 1 pound or so of cooked beef (I use leftover roast for this, brisket works, of course hamburger, too) 2 quarts (minimum) of beans (you can add more, if you need more) 1 Green Chile (can use a can, I have frozen ones which get stronger in flavor, if using fresh you probably want two) ½ cup Red Pepper, diced ¼ cup Green Pepper, diced 1 ½ cup salsa 1 onion, diced 1 quart beef broth (or use water with boullion) 16 oz sour cream 12 6 inch tortillas 2 cups cheese of your choice (cheddar, jack, Colby, pepper jack, combo) 4 tbsp vegetable oil Saute onion, peppers and chile in vegetable oil until onion is soft. Stir in beef, salsa, and broth, let simmer for about 15 minutes, then stir in sour cream. Grease crockpot. Layer meat mixture, tortillas, beans, small amount of cheese in CP, then cover with remaining cheese. Cook on low for 2 hours. Chicken Burrito Casserole 2 cup onion, chopped 4T. butter 2 cups chopped cooked chicken 1 4-ounce can green chili peppers, chopped 2/3. butter 1/2 cup flour 5 cups chicken broth 2 cup sour cream 3 cups shredded cheese (6 ounces) 12 6-inch tortillas. Saute onion in 4T butter until tender. Combine in a bowl with chicken and green peppers. In same pan, melt 2/3 cup of butter, add flour to create a roux, then stir in chicken broth, cook until thick. Stir in sour cream and 1 cup of cheese. Grease crock pot. Add small amount of sauce to bottom, then layer tortillas, chicken mixture, small amount of cheese and sauce. Finish with sauce and top with remaining cheese. Heat 2 hours on low. Link to comment

In case of fire, I have all my favorite recipes saved online. In case of TEOTWAWKI, I have them all written on recipe cards, too! Of course, those with smaller families will need to divide the portions for freezing, or half the recipe. Link to comment

I didn't have sour cream last night when I made this, planning on walking to the store but having some things come up that made me not able to, so I mixed up some beef broth thickened with cornstarch and milk to go in it. Not as zippy as the sour cream would have been, but still tasty. Could still then add the sour cream at the end if you wanted to. Mo7 Link to comment

Dinner has been, well...trying to use up some stuff in the freezer that is pushing the limit on freshness/lack of freezer burnness. So that's why I didn't post a July dinner menu. I go through every few days, each time getting a bit deeper into the pile, to pull out stuff that I either forgot I had, or that I had been holding onto for some unknown reason (umm, I bought it, I really should COOK it). We've also been having really simple fare due to lack of ready cash for buying ingredients. Also I was doing some freezer cooking for the crazy dispatch nights. Sooo...what is boils down to is not a normal month for us in terms of meal planning and prep. For this week-Monday was chicken and dumplings cause it was cold and rainy. Last night was pork chops, tonight will be tater tot casserole (need to use those tots and will be cool enough to bake), tomorrow night some other variety of pork chops (I freeze those in packs of 7-what we need to feed everyone on a typical night, and two oldest kids aren't here, so have enough for another night), then beans and rice, then tuna gravy cause DH won't be here. So, August will be closer to what our new normal will be. That will include mini sessions (like OAMC) and plans for me being gone on Saturdays to get my clothing consignment business going.
