quick tomato canning ???

I was doing a small batch of crushed tomatoes no water added...

 

got them boiling

 

knew this was a small batch...

 

had 4 jars sterile & ready

was not sure if I would get 4 so I only prepped lemon juice & salt into 3...

 

baby started fussing and I was not thinking and grabbed the UNprepped jar and filled, but when I realized it I was not sure which...

 

I dumped all 3 back into the pot and REadded lemon juice to each jar and refilled...

 

These should be fine correct?? Just have a bit *extra acid*.

 

Our tomatoes are playing out and these were mostly yellow pear and some small pink ones (not sure on variety), and a few romas...

The trouble is you START with them napping, but it is a long process ....

 

second question though...

 

I just pulled these 4 out and 1 looks normal

 

the other 3 (the ones I redid the acid in maybe??) have a 1/2-3/4" layer of just liquid in the bottom... tomatoes the rest of the way up...

 

like a separation...

 

did not have this with the 4th jar nor with my first 3 batches I did before...

 

very careful with head space & such... I had this happen too with my berries earlier...
