All I did was quarter some onions, slice up some carrots, a little sprig of fresh rosemary and thyme, about 10 peppercorns, a clove of garlic, a teaspoon of salt, a squirt of wosteshire sauce, a squirt of soy sauce, added it all to my jars before putting in the meat and put pieces of deer in the jars, then followed directions for processing meat. It turned out GREAT! just like a nice pot roast. Perfectly tender nicely seasoned. I can even use the juice in the jar to throw together a gravy, then mash up some canned potatoes and have a "home cooked" meal ready to go in about 15-20 mins. Link to comment
