Canning NUTS?

We have more hazelnut trees this year, maybe enough to steal some from the squirrels.

 

Has anyone canned nuts?

Do they turn out like roasted?

Yep, I have canned nuts. Crazy, huh? :lol:

 

I can't remember where I found this recipe...or technique, rather. I put nuts in jars, add hot lids, then in the pressure canner for about 15 min. at 11 lbs (for my elevation). I had some odd jars I used up and they worked like a charm. They also let me accumulate a nice nut stash a little at a time without worrying about the budget so much.

 

I did some fresh picked (dried) walnuts and pecans last summer and OMG cracking open one of those jars brought back some delightful childhood memories because of the SMELLS!! It keeps your nuts dry, moist, and good as new. It's also a good way to control 'measuring' for recipies and rationing, if nuts disapear in your house as fast as they do in mine.

Hey, Crazy,

Now you mean we have to search for bargains on nuts, too ?? Thanks for sharing your experience about them.

May need to double check the processing times on them so we do them right.

I have a few in the freezer, but that is all.
