Daylily Posted September 1, 2011 Share Posted September 1, 2011 I know I can substitute lemon juice for vinegar when canning tomatoes and cucumber pickles. Can I do the same for pickled cabbage? The approved recipe calls for 12 lbs cabbage, 8 cups 5% acidity vinegar, sugar, spices and no added water. Can I use half that amount of lemon juice like you do when canning tomatoes or should it be the same amount? TIA Link to comment
