I have plenty of dehydrated potato slices and I'm going to keep doing mine this way the next time I do them again. I would imagine the blanching and rinsing helps remove some of the starch too. He gives step by step instructions and nice visual comparisons. Putting them through a food processor slicer, if you have one, would speed up the process a little and help if you have hand or wrist issues. I hate to peel potatoes. They really hurt my hands. I've had my share of gray potatoes because I skipped the blanching process. My potatoes turned out gray from the freezer from not blanching them too. Dehydrating Potatoes.
