  1. I got this from a magazine. It's great for breakfast but have coffee or milk with it cuz it's kinda dry. Tastes great tho. Peanut Butter Bread 1 1/2 cups all purpose flour 1 cup quick cooking oats 1 cup sugar 1 talbespoon baking powder 1/2 tsp salt 3/4 cup chunky peanut butter 1 egg 1 cup milk 1 teaspoon vanilla extract In a bowl, combine the flour,oats, sugar, baking powder, and salt. Cut in the peanut butter until crumbly. Combine the egg, milk, and vanilla; stir into dry ingredients just until moistened. Transfer to a greased 9x5x3 loaf pan. Bake at 350 for 55-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes bfore removing from pan to a wire rack.
  2. This recipe is delicious even if broccoli is not your favorite veggie. My kids will eat this but they don't like broccoli. And , best of all, it's simple! Broccoli Casserole 2 pkgs finely chopped broccoli 1 can cream of mushroom soup 1 egg, slightly beaten 1 cup grated cheddar cheese 1/2 cup mayo 1/4 cup melted butter 1 small onion, finely chopped 1/2 package herbal stuffing mix Cook broccoli slightly less than package instructions. Mix broccoli,egg, mayo, onion, soup, and cheese in a greased 2 qt casserole. Mix stuffing with melted butter and sprinkle over broccoli. Bake at 350 for 30 minutes.
  3. This uses Jello! This was the cake my son requested for his birthday last weekend. Yummy, dude! Refrigerator Sheet Cake 1 box cake mix, yellow or white 1 small box jello 1 1/2 cups cold milk 1 teaspoon vanilla 1 package Dream Whip 1 small box vanilla instant pudding Mix jello with 3/4 cup boiling water and 1/2 cup cold water. Set aside and bake cake according to package directions in a 13x9 sheet pan. Let cake cool. Make holes in cake and pour jello in the holes. Beat dream whip, pudding, vanillam and milk until light in fluffy. Spread on cake then put in refrigerator.

Then Alice Springs Chicken from the other day. Yum! I can't remember what I've posted in the past so I apologize if there are any repeats. Gotta take care of crying cat.   5. Good wet, snowy morning! The snowflakes are falling and are absolutely beautiful. Temp is 32 F at my house. I have brewed my coffee, made a pitcher of iced tea for today, fed the pets, started the dishwasher, and have 2 pots of beans cooking. The pintos will be used for chili for the weekend and the Great Northerns will be used for tonight's supper. Yum! Schools are canceled and so is General Sessions Court. That means 17 yo ds is still in bed and poor, ol' hubby won't have to be at court today. He says thats one of the worse parts of his job. Today is his day off and now he can lounge around and enjoy it. We still can't agree on names for the hamsters. I really got a kick out of reading yesterdays posts. How about we keep at it today? I like Ding and Dang. I'll try Fuzzy and Wuzzy out on the family today. Hubby says a friend at work recently got 2 dachshund puppies and she named them Briar and Patch. Wasn't that cool?
  6. I've had fun with this the past couple of days. The idea of putting something together that is special for someone else is a wonderful break and a stress reliever during these trying times in my insignificant life. I'm glad I decided to play.   7. We are now under a winter storm watch. We could get anywhere from 1 to 6 inches of snow. Now that's what I call covering their tails! Gonna be hard to miss this one, huh?
  8. I've been using Green Day forever. I decided to check out the wild that snowmom was talking about. snicker....it hurt my eyes. I have decided to change to the large font blues. Kewl suggestion! I'd forgotten all about this fun feature. mommafitz

  11. Thanks ladies. I do feel better. I know we will have 30 days to vacate per TN state law. I was thinking about it after reading on here and I can still have a moving sale here, etc. I knew this all along but I have this "need to flee" feeling so bad that I wasn't thinking straight. Thank you for bringing me back from the clouds of la la land. I knew you guys would be a big help. As far as having a good cry, I've been crying since last night. Dern things just won't shut off once they get started.
  12. Mornin'. It's about 4:10 am. I've been awake since 2am. I have so much on my mind that I can't sleep. The 12 yr old has been up most of the night with a sore throat and a fever. All indications point to a sinus infection, bless his heart. I gave him some medicine and I think he's finally sleeping. I got a call from my father last night. He tells me that potential buyers for the house will be here on Friday between 4 and 4:30. He has the audacity to think I will give them a tour? My husband will be getting ready for work during that time. This is going to be very uncomfortable. It's a sad situation to begin with. I wish it could wait until we get away from here. This has been on my mind since he called. My husband and I argued yesterday-all day. I am getting real close to my breaking point with everything. Too much stuff. I really don't know if I can continue. The burden is getting too heavy. My nerves are shot. Think of me in your prayers please. I hope this request doesn't get me black balled or whatever. On top of all this good news, it's gonna be a dreary, rainy week. Bah, humbug. mommafitz

OUTBACK STEAKHOUSE ALICE SPRINGS CHICKEN Honey Mustard Marinade 1/2 cup Grey Poupon Dijon mustard 1/2 cup honey 1 1/2 teaspoons Vegetable oil 1/2 teaspoon lemon juice 4 skinless, boneless chicken breast halves 1 tablespoon vegetable oil 2 cups sliced mushrooms (10-12 mushrooms) 2 tablespoons butter salt pepper paprika 8 slices bacon, cooked 1 cup shredded Monterey Jack cheese 1 cup shredded Cheddar cheese 2 teaspoons finely chopped fresh parsley 1. Use an electric mixer to combine the dijon mustard,honey, 1 1/2 teaspoons oil, and lemon juice in a small bowl. Whip the mixture for about 30 seconds. 2. Pour about 2/3 of marinade over the chicken breasts and marinate them, covered, in the refrigerator for about 2 hours. Chill the remaining marinade until later. 3. After the chicken has marinated, preheat the oven to 375 degrees F amd heat up an ovenproof frying pan large enough to hold all four breasts and 1 tablespoon of oil over medium heat. (If you don't have an ovenprood skillet, transfer the chicken to a baking dish for baking.) Sear the chicken in the pan for 3 to 4 minutes per side or until golden brown. Remove the pan from the heat, but keep the chicken in the pan. 4. As the chicken is cooking, in a small frying pan saute the sliced mushrooms in the butter. 5. Brush each seared chicken breast with a little of the reserved honey mustard marinade (NOT the portion that the chicken soaked in), being sure to save a little extra that you can serve on the side later with the dish. 6. Season the chicken with salt, pepper, and a dash of paprika. 7. Stack two pieces of cooked bacon, crosswise,on each chicken breast. 8. Spoon the sauteed mushrooms onto the bacon, being sure to coat each breast. 9. Spread 1/4 cup of Monterey Jack ceese onto each breast followed by 1/4 cup of Cheddar. 10. Bake the pan of prepared chicken breasts for 7-10 minutes or until the cheese is thoroughly melted and starting to bubble. 11. Sprinkle each chicken breast with 1/2 teaspoon parsley before serving. Put extra honey mustard marinade into a small bowl to serve on the side. This comes from TOP SECRET RESTAURANT RECIPES by Todd Wilbur. We loved this at Outback Steakhouse . Since we can't afford to eat there anymore, I located this and it's just as good made at home. I have to triple the marinade recipe because we like to have 2 baking dishes full. We walked outside in the glorious sunshine after eating this afternoon-in shirtsleeves! Then we decided to take a drive to enjoy the evening before the sun went down.   18. brigid, I asume it is fairly new cuz it's in the shelves that are only allowed to be checked out for 14 days. The ones in those shelves are generally new releases and/or in big demand. I don't know if I've any of her stuff yet. I've read so much tht I don't always remember. mommafitz
  19. Mornin'! We have gorgeous sunshine this early mornin'. Hubby and 12yr old ds have just left to go squirrel hunting. (They remind me of rats with bushy tails. Yuck!) Older son is still asleep. He's been socializing this weekend so he's pooped. Today, I'm spending my morning coffee time reading and posting on the computer. I plan to get cleaned up and get busy after that. We are having son's birthday supper tonight instead of tomorrow since hubby is off and we will be home. He wants Alice Springs Chicken and he has requested a Refrigerator Sheet Cake. So I will be cooking today while the chicken is marinating. I have laundry to do and dishes to get washed. I am going to clean our living room and rearrange the furniture just a tad bit. I have an idea to designate an area in there to start putting the stuff I get packed. Hopefully, this will help with being (somewhat) organized in preparing to move. We hope to start moving next week. I had to return a phone call to my father last night. He was very short and to the point during our brief conversation. He has someone interested in coming out to look at the house. I said ok just call me ahead of time if possible. He didn't ask about the boys (his grandchildren) or wish the oldest a happy birthday. Nothing. I was very polite. I attempted to make small talk but he wasn't interested. I was worried I'd get emotional like I have in the past but I did fine. No tears. No sadness. Nothing. Yep, I'm turning into a stone!
