Grubby Posted August 4, 2006 Share Posted August 4, 2006 Easy Peanut Butter Cookies 1 cup peanut butter (creamy or chunky) 1 cup of sugar 1 egg Mix and drop by teaspoons. Bake at 350 degrees for 12 to 15 minutes. Add ins: 1/2 cup chocolate chips 1/2 cup nuts In todays batch I added 1/2 cup of Honey Bunches of Oats cereal. Link to comment

I have that same recipe, the only difference is that mine also calls for a tsp. of vanilla. And yes, suzyq, they work just fine w/o the flour. Personally, I find them to be a little too rich, but DH and one of his friends think that they are the best PB cookies ever. I don't often make PB cookies - too expensive - but in looking at my "Diet for a Small Planet" book there is a recipe for a PB cookie that is "maybe" a bit healthier? Beat until creamy: 1/2 cup oil 1 cup honey Add and continue beating: 3/4 cup peanut butter Beat in: 2 eggs, beaten Then add: 1/2 cup instant dry milk 2 tsp. baking powder 1/2 tsp salt 1 tsp cinnamon 1/2 tsp mace 1/4 tsp cloves Stir in by hand: 1/2 cup rolled oats 1/2 cup raisins 3/4 cup whole wheat flour Make sure everything is well blended. Drop by teaspoonfuls on an unoiled cookie sheet. Bake 10 to 12 minutes at 325 F. Link to comment

Grubby Posted August 5, 2006 Author Share Posted August 5, 2006 I was looking for a simple recipe I could just toss together and have cookies at a moments notice. Another thing is my son can't have chocolate or dairy. He can't have your run of the mill chocolate chip cookies so I make a lot of peanut butter cookies. It also helps to rotate my peanut butter stock. Link to comment
