Dried chipped beef and cheese are rolled into a tantalizing treat that's great with buttery, round crackers, vegetables and tortilla chips." INGREDIENTS: 3 (8 ounce) jars dried chipped beef 2 tablespoons butter 2 (8 ounce) packages cream cheese, softened 1 tablespoon prepared horseradish 1/4 cup chopped green bell pepper 1/4 cup chopped red bell pepper 1/4 teaspoon ground black pepper 1/4 cup shredded Cheddar cheese DIRECTIONS: 1. In a medium saucepan over medium heat, cook and stir the dried chipped beef in butter until evenly browned. 2. In a medium bowl, whip the cream cheese, horseradish, green bell pepper, red bell pepper and pepper until well blended. Mix in 2/3 of the beef. Roll into a ball. 3. Roll the ball in the remaining beef and the Cheddar cheese. Wrap in plastic and chill in the refrigerator at least 1 hour before serving. Combine the cream cheese, dried beef, Worcestershire sauce, green onions, and monosodium glutamate; mix well, and refrigerate until chilled. 2. Mix together the chopped pecans and parsley. INGREDIENTS: 8 ounces shredded Cheddar cheese 3 ounces cream cheese 1/4 cup black olives 1/2 teaspoon Worcestershire sauce onion salt 1 pinch garlic salt 1 pinch celery salt 1 (4 ounce) jar dried beef, chopped DIRECTIONS: 1. In a large bowl, combine the Cheddar cheese, cream cheese, olives, Worcestershire sauce, onion salt, garlic salt and celery salt. Mix until smooth. Shape into ball, wrap in foil, and refrigerate until needed. 2. About 30 minutes before serving, remove foil from cheese ball and reshape if necessary. Roll chopped beef to completely coat. Crunchy Cheeseball Category: Cheeseball Serves/Makes: 12 Ready In: 2-5 hrs Ingredients: 16 ounces softened cream cheese 1/4 cup mayonnaise 1/2 cup freshly grated parmesan cheese 2 scallions, chopped 2 teaspoons prepared horseradish 1 small carrot, finely chopped 1 celery stalk, finely chopped Salt Freshly ground pepper 1 1/2 cup chopped toasted pecans Directions: Beat all of the ingredients except for the pecans together with an electric mixer. Spoon the mixture onto a sheet of plastic wrap and form into a ball. Wrap the ball tightly with the plastic wrap and place in a bowl roughly the same size to help the ball hold its shape. Chill for at least two hours. Roll the ball in the pecans. Refrigerate until ready to serve. Serve with sturdy crackers, apple slices, carrot sticks, and celery stalks. ************************************ Almond Cheese Pinecone Recipe Ready in: 1-2 hrs Serves/Makes: 12 Ingredients: 2 packages (8 oz size) cream cheese -- softened 2 jars (5 oz size) process cheese spread with pimientos 1/2 pound blue cheese -- crumbled 1/4 cup minced green onion 1/2 teaspoon Worcestershire sauce 2 cups Blue Diamond -- blanched whole almonds, toasted pine sprigs -- for garnish crackers Directions: In a large bowl, with mixer at medium speed, beat cream cheese, cheese spread with pimiento and blue cheese until smooth. With a spoon, stir in green onions and Worcestershire sauce. Cover and refrigerate about 1 hour. On a work surface, with hands, shape cheese mixture into the shape of a large pinecone. Arrange on a wooden board. Beginning at the narrow end of the pinecone, carefully press almonds about 1/4 inch deep into cheese mixture in rows, making sure that the pointed end of each almond extends at a slight angle. Continue pressing almonds into cheese mixture in rows, with rows slightly overlapping, until all of the cheese is covered. Garnish with pine sprigs. Blend cream cheese, onion, ham and ranch dressing all together. Roll into a ball then roll in the seasoned pepper. Place one piece of ham in bottom of serving bowl and wrap another piece on top. Chill. It is thin sliced beef. You will find it over there in the canned meats section if it is not there check with the bacon bits. It comes in a little glass jar. Link to comment

I rolled it in some crushed walnuts too and that just made it even better. The good thing about using that jarred up meat is that you can rinse it well and get most of the saltiness out of it that way before using it. Q Link to comment
