Canned Nerd Posted November 14, 2008 Share Posted November 14, 2008 All the 'canning' recipes are totally outdated and considered unsafe by today's standards. Recipes using vinegar would be a problem since today vinegar is regulated at 5%, but in the past it could be as high as 18%. Link to comment

Liked the spice grapes.. now to go back and look some more! a couple of the casseroles can be made from pantry items! lima bean and vegetable with ham... canned ham or spam. oh goodness.. Violet Posted November 15, 2008 Share Posted November 15, 2008 I was taught vinegar could be as much as 40 percent acidity in years past. That is why old pickle recipes are now considered unsafe. Also, I see they still have paraffin listed as a method to seal the jams. Guess you won't die from it, but the jams can mold, then you lose your food since molds can cause mycotoxins that can cause certain types of cancers. I am not being critical or picky, just interesting how things have changed over the years. Still, good to have ideas of what to cook. I think this is why those of us who actually do know how to cook will become more needed as time goes by to teach others how to do these things. Link to comment
