Five Can Soup 1 can Original RoTel 1 can chili with beans 1 can whole kernel corn 1 can Campbells Vegtable Beef Soup 1 can Campbells Tomato soup Mix all together and heat. gardeningmouse Posted December 7, 2008 Share Posted December 7, 2008 Do you drain the tomatoes and the corn first? We don't have RoTel here so I've never used it and don't know if it needs draining. I was thinking of trying it with a can of diced tomatoes with red peppers. And do you dilute the canned soups like you would normally? Link to comment

Violet Posted December 7, 2008 Share Posted December 7, 2008 For those of you who can, you will be able to can your own, too, like RoTel. Just find the recipe for tomatoes with zucchini and use the peppers instead, or something like that. As long as you use the same total amount of low acid veggies to tomato ratio, you will be able to come up with something. Thought maybe this would help some of you save money later on. At my store they carry Rotel in with the diced and whole canned tomatoes. I thought it was something good and most of us would have this stuff in our preps. No you don't drain the corn or anything, just open the cans, mix all together and heat. Link to comment
Andrea Posted December 13, 2008 Share Posted December 13, 2008 There is a great RoTel like recipe in "Putting Foods By". The recipe is called Minnesota Mix and I've been using it for years. I LOVE the stuff and use it in everything from pot roasts to stews to chili. Just be warned that it no longer fits into the current canning guidelines, so use at your own risk. Link to comment

When heated, add a nice dollop of butter. Really nice on the throat if you've got a cold coming on! Link to comment
