The next time we butcher, I'll spend a few days in the kitchen canning beacuse it's absolutely wonderful to have on hand. Smoking or salting requires a bit more then getting out the canner and jars, put meat in jars and can. Drying is another way.. jerkey can last for years.. not that I want to try to chew it after years! Link to comment
