Violet Posted July 15, 2007 Share Posted July 15, 2007 Candied Zucchini 6 Zucchini; medium, very firm, peeled 2 c Sugar; granulated 3/4 c Water 1 tb Lemon juice; strained, or other flavoring Make syrup by boiling sugar and water together for 5 minutes. Cut zucchini into 1/2" cubes. Drop cubes into boiling syrup and cook over low heat only until barely tender (they will become somewhat transluscent). Chill in the syrup overnight. The next day, spread cubes on dryer trays and dry at 135 degrees F for about 8 to 12 hours, until leathery. Store airtight. I know I saw where someone used Koolaid to flavor it. Any extract should work, too. Also, roll in sugar to make them more like "gumdrops". I have not tried this, but sounds fun ! Link to comment

Dee Posted September 13, 2007 Share Posted September 13, 2007 Ok Violet, you're right, it's good stuff!!! I made 1/2 a batch a couple of weeks ago and people ate it right and left. I'm cooking up another 1/2 batch as I write. I've got enough zucchini for another 1/2 batch but I'll do it later because my dehydrator won't hold the whole amount. Thanks for the recipe....yum, yum!
